Cooling bed sheets: what actually makes sheets sleep cool
Two things decide whether sheets sleep cool: the fibre and the weave. Natural fibres that absorb moisture (cotton, linen) in an open weave (percale) sleep coolest. Polyester microfiber sleeps warmest. Thread count is close to irrelevant, and above roughly 300 to 400 it often works against you.
So the short version: buy cotton percale or linen, avoid microfiber, and ignore the big number on the packet. If you still wake up hot after that, the problem is under you, not on top of you, and the mattress or topper is the layer to look at.
The two things that matter
Sleeping cool is about moving heat and moisture away from your skin. A fabric does that well when the fibre absorbs moisture and the weave leaves room for air. That is the whole principle, and it explains every recommendation below.
Fibre first. Cotton and linen are absorbent, so sweat is pulled off the skin and can evaporate. Polyester is not absorbent, so moisture stays where it formed and you feel clammy while the fabric holds your body heat. Weave second. Percale is a plain one-over-one-under weave with space between the threads. Sateen floats several threads over one to make the surface smooth and shiny, which also makes it denser and warmer.

One practical note on linen: it is the coolest option in high summer but it looks creased by nature and costs more up front, and it takes several washes to reach its soft state. If a crisp, tidy bed matters to you, percale gets you most of the cooling with none of the rumple.
Why thread count misleads
Thread count is the number of threads in a square inch of fabric. More threads in the same space means a denser cloth, and a denser cloth breathes less. That is the opposite of what a hot sleeper wants, which is why the highest-thread-count sheets on the shelf are rarely the coolest ones in the shop.
It gets worse than merely unhelpful. Past roughly 300 to 400 in cotton, big numbers are often produced by twisting several thin plies into one thread and counting each ply separately, so a 1,000-count sheet can be a 250-count fabric with the marketing turned up. A good cotton percale usually lands somewhere around 200 to 400, and beyond that you are paying for a number rather than a better night.
What to read instead: the fibre (100 percent cotton or linen, not a polyester blend), the weave (percale if you want cool, sateen if you want smooth), and the finish (avoid wrinkle-free treatments, which coat the fibres and reduce breathability).
When sheets are not the problem
Sheets are a couple of millimetres of fabric. They can stop you feeling clammy, but they cannot dump the heat stored by the several inches of foam underneath you. If you have swapped to percale and you are still waking up hot, the mattress or the topper is doing it.

- Check the topper before you replace the bed. If a foam topper was added for comfort and the heat started afterwards, the topper is the cheapest thing to change. See whether a topper is worth it.

Only partly, and often they are not the real problem. Sheets are the thinnest layer in the bed. If you sleep on memory foam, the foam is holding heat under you all night, and no sheet can shed what the mattress keeps storing. Switch to breathable sheets first because it is cheap and easy, but if you still overheat, look at the mattress or topper underneath. How should cooling sheets be washed to stay breathable?
Wash warm rather than hot, and skip fabric softener and dryer sheets. Softeners leave a waxy coating on the fibres that fills the air spaces you bought the sheets for, which makes percale and linen feel less breathable over time. Tumble on low or line dry. Natural fibres also soften on their own with repeated washing, so linen and percale get more comfortable without any additive.
